Recipe: Chimichurri Octopus with Fries

This dish was created by chef Jurgen Hofman (Culinary Demons) and is an ode to the rustic flavors of Southwest France and is sure to impress. Here’s how to make it!

Ingredients (Serves 2):

  • 2 cans of Pirate Cannerie Chimichurri Octopus
  • Potatoes for fries (Santana potatoes work great)
  • Duck or goose fat (alternatively, beef tallow or regular frying oil)
  • Salt
  • Optional: delicious mayo or extra chimichurri for dipping

Tools:

  • Charcoal BBQ

Instructions:

Preparing the BBQ:

1. Start by setting up your BBQ for direct grilling. Place a heavy pan (cast iron is ideal) over the charcoal and fill it about 3/4 full with duck fat.

2. While the fat melts, slice your potatoes into your favorite fry shape. Give them a quick rinse and pat them dry with a tea towel.

First Fry:

3. Heat the fat to around 125°C (255°F). Fry the potato slices for about 14 minutes. They should remain light in color and feel slightly soft.

4. Use a slotted spoon to remove the fries and place them on paper towels or a tea towel. Let them cool in the fridge for at least 1 hour.

Second Fry:

5. Increase the oil temperature to 190°C (375°F) (try not to go higher than 200°C). Fry the potatoes again until they are crispy and golden.

Preparing the Octopus:

6. While frying the fries, move some coals aside. Place the sealed octopus can over the coals, cracking it open slightly to prevent it from exploding.

7. Heat for 2-3 minutes to warm the octopus.

Serving:

8. Arrange the hot octopus over the crispy fries.

9. Drizzle the chimichurri sauce over the fries, or mix it with some good-quality mayonnaise for a delicious dipping sauce.

10. Sprinkle with salt to taste and enjoy!
